Ingredients
  

Meatloaf Ingredients

  • 2 lbs ground beef 85/15
  • 1 cup finely chopped white onion
  • 3 garlic cloves minced
  • 2 large eggs
  • 3/4 cup Italian-flavored Panko breadcrumbs
  • 1/3 cup chili sauce
  • 2 tbsp ketchup
  • 1 tbsp dried parsley
  • 1 tsp Olive Oil
  • 1 tsp Soffritto seasoning or Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Glaze Ingredients

  • 3/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 ½ tsp white vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions
 

  • Preheat & Prep
  • Preheat your oven to 375°F. Lightly grease a standard loaf pan with nonstick spray.
  • Chop & Mix
  • Finely chop the onion and mince the garlic. In a large bowl, add all meatloaf ingredients. Mix gently with your hands just until combined—avoid overmixing for the best texture.
  • Shape & Bake
  • Transfer the meat mixture into the loaf pan and smooth out the top. Place in the oven and bake at 375°F for 40 minutes.
  • Make the Glaze
  • While the meatloaf bakes, stir together all glaze ingredients in a small bowl until smooth.
  • Glaze & Finish Baking
  • Remove the meatloaf from the oven, spread the glaze evenly over the top, and return it to the oven. Bake an additional 20 minutes, or until the internal temperature reaches 160°F using an instant-read thermometer.
  • Rest & Serve
  • Let the meatloaf rest for 10 minutes before slicing. This helps it firm up and makes cleaner slices.

Notes

Mix just until the meat mixture is combined. Overmixing can lead to a dense, tough meatloaf. For easier cleanup, line the pan with parchment paper or foil before baking.
