- 1 cup Trader Joe’s Protein Pancake Mix
- 3/4 cup water or milk
- 1 egg optional
- 1/2 tsp vanilla extract optional
In a medium bowl, mix the pancake mix with water or milk. Add egg and vanilla if using. Stir until just combined.
Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter per pancake onto the skillet.
Cook for 2–3 minutes, until bubbles form and edges are set. Flip and cook another 1–2 minutes.
Serve warm with your favorite toppings.
