Ingredients
  

  • 1 cup Trader Joe’s Protein Pancake Mix
  • 3/4 cup water or milk
  • 1 egg optional
  • 1/2 tsp vanilla extract optional

Instructions
 

  • In a medium bowl, mix the pancake mix with water or milk. Add egg and vanilla if using. Stir until just combined.
  • Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour about 1/4 cup of batter per pancake onto the skillet.
  • Cook for 2–3 minutes, until bubbles form and edges are set. Flip and cook another 1–2 minutes.
  • Serve warm with your favorite toppings.

Notes

Stir in mini chocolate chips, blueberries, or even a sprinkle of shredded coconut to add texture and color. For the kids? Serve with whipped cream and pastel sprinkles for a plate that feels like a treat.
