Doritos Quesadilla

This is not your average quesadilla! With layers of gooey cheese, taco-seasoned beef, and the bold crunch of Doritos in every bite, it’s a mashup that hits all the right notes. The flavor? Loud. The texture? Next level. The prep? Easy-peasy.

- 2 flour or corn tortillas per quesadilla
- 1 lb. ground beef
- 2 tbsp taco seasoning we use our Taco Time Seasoning Recipe
- 1/2 cup shredded cheese per quesadilla – cheddar, Mexican blend, or your favorite
- Crushed Doritos Nacho Cheese, Spicy Nacho, or Cool Ranch work great
- Optional toppings for dipping: sour cream guacamole, salsa, nacho cheese
Preheat a large skillet or Blackstone griddle to medium-high heat.
Cook the ground beef, adding taco seasoning and a small splash of water if needed to mix well.
Place one tortilla on the skillet or griddle.
Sprinkle half the shredded cheese evenly over the tortilla.
Add a layer of the seasoned ground beef.
Sprinkle crushed Doritos generously over the beef layer.
Add the remaining cheese.
Top with the second tortilla.
Cook until the bottom is golden brown, then flip to toast the other side until the cheese is fully melted.
Slice into 4 wedges and serve hot with your favorite dipping sauces.
Fun Twist
Try mixing Doritos flavors! Go half Nacho Cheese and half Cool Ranch in the same quesadilla for an unexpected flavor bomb.
